I enjoy cooking. The end result of good food for myself, friends and family is worth some time in a hot kitchen or large amounts of time spent slicing root vegetables. I want my food to make others happy. I want it to be nutritious (most of the time) but still good to eat. I want to show them that vegan food is more than palatable. It is wonderful and delicious.

One of the best feelings I get as a vegan chef is when I can take non-animal ingredients and recreate something that I used to eat as an omnivore. Today was actually a bit simple. I just wanted to make a “hamburger helper” style dish. Elbow macaroni was cooked. Mushrooms and onions were sliced than sautéed. Tomato sauce was seasoned. It was all quite simple and came out fabulous. However, the full meal, as tastey as it was, is not the real reason I am so happy about tonight’s time in the kitchen.

Thank God, I was able to make BOCA ground crumbles taste good for once. I think they be may be even yummy enough for an omnivore!
